Quinoa redux

This came out of a last-minute lunch fix — a combination of fridge left-overs and other on-hand ingredients. Think mac and cheese, but without the day-glow orange and accompanying chemicals:


  • Left-over quinoa, cooked in chicken broth and seasoned with turmeric and cayenne pepper
  • 1/4 cup of freshly frozen corn (from a neighborhood farmers market)
  • 1/4 cup of shredded cheese
  • Salt to taste

Combine ingredient in a glass bowl, cover with a paper towel and microwave for about 2 1/2 minutes. Presto! A tasty lunch that’s healthy, easy and cheap. What’s not to love?
