Preserved Lemons — week one

Lemons2_week1Lemons can’t hurt you, can they? I mean, once plucked from their thorny tree home, they won’t rise up in revolt, haunt you in the night or waterboard you in lemon juice for all crimes against lemonanity — right?

Then why are these lemons starting to scare me? It’s only week one of my preserved lemon project, but I’m feeling a tad concerned. The juice has clouded. The salt still settles at the bottom of the glass. And the brine is wreaking havoc on the jar’s metal findings.

Am I making preserved lemons or is this a lab experiment gone awry?
